Have you ever noticed an unusual coating on your chocolate? While it may look like it’s gone bad, it’s a common occurrence that happens when chocolate has been exposed to warm temperatures and moisture. Chocolate experts call this chocolate blooming, and it can happen to any type of chocolate.
There are two types of chocolate blooming, fat and sugar bloom.
Fat blooming happens when the chocolate has been around warm temperatures and is the most common type of chocolate bloom. It can be indicated by grey or white streaks on the chocolate, which means the cocoa butter separates from the other ingredients.
Sugar bloom is caused by too much moisture, and the white coating seen on the chocolate is the absorbed sugar crystals.
Blooming does not mean the chocolate has gone bad, so you don’t have to throw it away. To fix sugar bloom, all you need to do is melt it down and remold it.
While blooming doesn’t look pleasing to the eye, it is still safe to eat and bake with it.
You can avoid sugar bloom by placing your chocolate in a cool, dry location in an airtight container. While you can store it in the fridge, there are specific steps you should take to make sure the chocolate doesn’t absorb the other flavors in the refrigerator.
Wrap the chocolate and then place it in an airtight container. When you want to use it, bring it out and allow it to warm to room temperature.
Properly stored chocolate can last three to six months, and avoiding temperature shocks can prevent blooming.
You can also freeze chocolate, but before you do, it’s best to store it in the fridge for twenty-four hours before it goes into the freezer.
By placing the chocolate in the fridge before freezing, you avoid temperature shocks. The same goes for allowing the chocolate to reach room temperature.
